I don’t have an ice cream making machine or one of those churning thingies, but I wanted some ice cream the other day, and I found this recipe that only takes 3 ingredients. It makes delicious ice cream and you don’t have to churn anything.
The gist of it: heavy whipping cream, a can of sweetened condensed milk, some vanilla extract, and a mixer.
I’ve modified the recipe because the first batch I made was too sweet. Here is my second batch.
2.5 cups heavy whipping cream cream
1 14 oz can of condensed milk
1 Tbsp vanilla extract
5 fresh strawberries, chopped and sprinkled with 1 tsp of sugar
some strawberry glaze I had lying around
Put the whipping cream into the mixer and beat it until it’s stiff. With the standing mixer, this takes about 3 minutes. If you overbeat it, the cream will collapse, so beat it just until stiff peaks from.
Switch the mixer to low speed and slowly mix in 1 can of sweetened condensed milk. Then Slowly mix in 1 tablespoon of vanilla extract. Now the base is done. I added strawberries because that’s what kids asked for.
I mixed that in very carefully. Then I poured the whole kaboodle into a metal breadloaf pan.
Now we cover it with plastic wrap, making sure that there is as little air between ice cream and wrap as possible. Don;t worry, wrap comes right off.
Stick in the freezer for 4 hours.
Tada! Eh, well I made it yesterday, but this is what is left this morning.

My discovered hack involving whipping cream is that if you use heavy cream instead of milk to make yoghurt, you end up with a very passable semblant of a “Petit Suisse”.
If you add 3 or 3 tablespoons of custard powder and a couple of sachets of vanilla sugar, it’s pretty good too.

Yummy! Next time make a cookies and cream ice cream, all you need to do is add crushed Oreo cookies, some ppl add cream cheese to it, I don’t, I just make it the way you made it and instead of strawberries add cookies, it is delicious ????

Sometimes coconut cream is a good substitute for the cream if you can’t tolerate dairy. Search for non-dairy coconut ice cream recipes.

I make ice cream like this all the time it’s great!! Apparently putting air into ice cream is how the manufacturers make it soft scoop too! I’m in the uk so metric recipe but it is easy be that’s the packet sizes so super easy for me. Anyway melt 200g of dark chocolate, optional to melt with the can of condensed milk but I’m lazy so I don’t bother. I use a hand whisk to mix in 300ml (half pint) of single cream and condensed milk really quickly before the chocolate stops being melted!! It’s amazing! You can add orange extract and it tastes awesome!

Does it work OK with single cream? Our last grocery order didn’t have double or whipping cream and gave us Elmlea single as an alternative, so it might be an issue to get it round my parts. If single works that could be handy.

Sounds about right…I work on the theory that shop bought stays in cupboard/fridge/freezer until you have to throw it away but homemade just slides off the plate within minutes and is finished within hours. I actually have an ice cream maker but still make it like you described as I think it tastes better!

I might have to try that but minus the strawberry stuff. We’re having some rather warm weather in London, UK, making the lockdown all the worse. Ice cream sounds tasty about now especially if it’s not too sweet, the big downfall of ice cream for refreshment I often find. What I wouldn’t give for a nice sharp raspberry sorbet about now. I wonder if lemon would curdle the mixture?

It will if you use the juice. If you use the zest, it won’t curdle.
If it curdles because you used the juice, it will become buttermilk lemon ice cream. 🙂

I made too much freshly whipped cream once for a cake topping, so I poured it in a freezer bag and chucked it in the freezer,,, A few days went by, and I hauled it out, it was absolutely the best ice cream I ever ate, and I didn’t do anything to it except throw it in the freezer rather than throw away.
Now I always make a little too much, so I have left over whipped cream. I mixed peanut butter in it once, and that was yummy too.

I make a version of this (just plain) and think it has a great “mouth feel”, like ice cream used to taste before they started whipping so much air into it. It is rich and creamy. But note you should use a good vanilla, not the artificial stuff.

Cool! I need to try this, over quarantine. Currently, I make a pretty cool one with frozen bananas. Break one ripe banana into small chunks and freeze overnight. Add 3 tablespoons of milk, sugar to taste (I usually end up with 3 tablespoons of that too) and whatever flavor you like – 2 tablespoons of peanut butter, or a handful of frozen/fresh strawberries, 2-3 spoons of drinking chocolate
powder or even just cookies (with a dash of vanilla extract). Blend it all in and freeze for a couple of hours. It won’t be as creamy as this (above) but it is pretty tasty & cold.

Looks great. I have seen a recipe like this before on the back of an Eagle Brand sweetened condensed milk label. Sometimes you will find really great recipes on the back of those labels.
At least you know what’s in your ice cream and can pronounce the ingredients. 😀

Huh. So it’s basically whipped cream with a little extra oomph. I’m lactose intolerant and tried making peanut-almond ice cream in my vitamix yesterday but it failed miserably. I have made whipped cream with coconut cream, though, and it was delicious. Maybe I’ll give that a try and then freeze it, thanks for the idea!

Just a tip when making ice cream, don’t substitute white sugar with coconut sugar! You get something that looks and tastes completely different than what you’re expecting ????????????
Instead of Strawberry Ice Cream, I ended up with what I now call Dirty Strawberry Ice Cream. It’s good, but it is light brown instead of pink and has a caramel-like taste:)
Here is recipe I used for my 4 Quart Ice Cream Maker. You will have to adapt for different sized machine.
Dirty Strawberry Ice Cream
3 C Organic Whole Milk (bottled milk tastes better than carton)
3 C Organic Heavy Cream
3 C Organic Coconut Sugar (use white cane sugar for regular strawberry ice cream)
2 T Juice from Organic Lemon
4 ½ C Organic Strawberries
Prepare ice cream maker for use as per machine instructions. Set aside.
Thoroughly clean organic strawberries. Remove stems. Cut them into very small pieces (large pieces will be hard to eat when frozen). Take ½ C of the strawberries and crush them. Add it to the non-crushed strawberries. Add lemon juice. Mix together. Put mixture into the freezer for 2 hours (this will help ensure ice cream is cold enough when it is being churned).
While the strawberries are in the freezer, mix the milk, heavy cream, and sugar together. Put mixture into refrigerator and take it out when the 2 hours for the strawberries is over.
Add the strawberries to the milk, cream, and sugar. Mix thoroughly and put into the ice cream maker. Follow instructions for machine use. Once complete, remove ice cream and put into container and freeze until it is the desired firmness. Enjoy!

I’m pretty astounded to read the comments and realize that some people actually have heavy whipping cream and condensed milk on hand to do this. I guess I’m just a dull eater.
I don’t understand a lot of the angst of people who are “stuck at home” with this pandemic, I think. I am always at home, other than when I absolutely need to go to a store. Someone asked me how often I go out, and I went out and looked at my car’s odometer and realized that I bought that car at the end of October of 2017 and I have yet to add 5,000 miles to the odometer reading it had when I got it, despite it having to make that 120-mile round trip the dealer took it on to have it serviced at the authorized dealer for Subaru and the week my husband took it to his WAY out of town work after his car was totally demolished on the black ice on the freeway. I keep a list of things I’d like from the stores, and when something on that list is a critical thing, I take the whole list with me and go, face mask and hand sanitizer in hand, and buy what I want as I buy what I need. Delayed gratification is still gratification.
But I will admit that if I had the ingredients, I’d try this recipe. I’d use raspberries instead of the strawberries, but DANG! that looks good.
